We decided to brew this beer with a hint of ginger, a traditional Saison brewing spice, and also with some cardamom, which comes through as an exotic spiciness in the finish. Additional complexity comes from the blend of grapefruit, lemon and orange peel which combine nicely with the tropical fruit esters provided by the Belgian yeast.
