Faux Swizzle was a fun dive into the possibilities of combining bright fresh citrus flavors and an herbal fragrance in our brewing process while paying homage to one of the classic tiki drinks of the 1940s created by Don the Beachcomber, the godfather of tiki himself. This imperial sour wheat opens with a nose of fresh lime rind and subtle licorice. Faux swizzle is kettle soured with demerara sugar leaving a rich mouthfeel while finishing with a welcoming tartness. Whole star anise, Azacca, and Citra hops adds a depth of juicy citrus with notes of lychee and stone fruit while the addition of lime rounds out the tart finish. At 8% abv this imperial sour drink is impressively smooth and is just as refreshing as it is unique.
Strata and Mosaic hops give strawberry notes that beautifully enhance the caramel-like malt backdrop. The result is a 9% beer as enjoyable to look at as it is to drink. (And way better than a kick in the head.)

This profoundly complexed beer will overwhelm all but the most stalwart beer fanatics with its level of intensity. Rich coffee, bitter and milk chocolate characteristics abound, while dark charred oak, rich vanilla and caramel from the bourbon barrels synergistically elevate and further enhance the ultra-intense taste of the original beer. The name we chose for this heady creation, “Fyodor”, is a tip of the hat to Fyodor Dostoyevsky, one of the greatest, most influential novelists of Russia’s Golden Age.
